This delicious recipe is full of protein, cheesy goodness and veggies! It’s a great choice for camping, or just as a quick dinner! It’s absolutely fantastic!
Campfire Tex Mex White Bean Chicken Foil Packets
You CAN eat healthy while camping! Who knew? These Campfire Tex Mex White Bean Chicken Foil Packets were an absolute, 110% hit with the family. Chicken foil packets are the way to go when camping! Of course, my daughter’s had no spice, but other than that, we were good to go! My son wolfed this down and Mike and I couldn’t believe how delicious this was! It doesn’t even feel like a healthy meal, and those are the best kind!
How to Make Chicken Foil Packets
- Combine all ingredients, except the cheese and green onion, in a large bowl.
- Place 1/4 of the mixture on each foil square, then fold up the tinfoil so that the mixture won’t leak while turning the packet over the fire.
- Place on a BBQ grill or the grate over a campfire and cook for 20-25 minutes, turning the packets occasionally so that everything is cooked evenly.
- When the chicken has been cooked thoroughly, remove from the fire and cool slightly.
- Turn out the foil packets onto a plate, top with cheese and green onion.
- And you’re done!
We all know that we eat like crap when we are camping. Cookies. Cinnamon buns. Hobo pies over the fire. Marshmallows and S’Mores. The list is endless of junk food that we eat out at the trailer. This year we are going to be spending a LOT more time out there and I refuse to feed the kids hot dogs and marshmallows when we are at the lake. I’ve been concocting more healthy camping meals already on the two weekends we were out there and this one will be on the menu all summer long!

ReplyThis was really good but the calories are definitely not accurate. With 2% cheese, I calculated 340 calories per serving.

ReplyThanks for sharing this recipe Karlynn.
For a slightly different flavor(s), you could substitute the can of tomatoes with a can of Rotel (canned tomatoes with green chile peppers) or the canned tomatoes that already have garlic and Italian herb blends (basil, oregano, & thyme), etc. Our local Aldi store occasionally sells canned tomatoes that has corn & okra added.

ReplyMy kids picked this recipe out for dinner last night. We LOVED it! We baked it in the oven 450 degrees for a little under 20 minutes. The chicken was so tender and tasty. It was so fun to have the kids make their own packets. Thank you!!

ReplyDo you cook the chicken in the packet or separately?

ReplyWould I be able to cook this a oven? Really want to try this but I have no BBQ 🙁
thekitchenmagpie says
ReplyTerrichalmers You sure can! Just make it at 375 degrees on the middle rack!
Kelcey Howatt says
ReplyLOL thank you, top rack it is!
The Kitchen Magpie says
ReplyEither or. If you are forgetful, top rack LOL! Also, it depends on the BBQ. If you know the bottom is rather undependable heat-wise, use the top.
Kelcey Howatt says
ReplyMy kitchen skills have yet to translate well onto the bbq. Do you typically put your foil packet on the top rack of your bbq, or onto the main grill?
