Gorgonzola-Stuffed Steak Roll-Ups

If you’re going to pick up a nice piece of steak to make this recipe, why subject yourself to a container of that sub-par crumbled blue cheese? Treat yourself! Instead, head over to the cheese counter where all the good stuff lies and pick out a nice wedge of Gorgonzola Dolce. The Italian blue cheese is mild and sweet, and melts perfectly inside the roll ups. It’s the little things that count, after all.

Keto-Style Chili

What does it mean to be keto-friendly? With a ketogenic routine, you are going for a very low-carb, high-fat, and medium-protein nutrition profile. Most people on keto average around 20 grams of carbohydrates a day. Keeping that in mind, I aimed for a chili that came in at roughly 7 grams of carbs per serving, before toppings.

The smell of classic chicken soup, fragrant with herbs and vegetables, is one of the most comforting smells that a kitchen can produce. Chilled Cucumber Noodles with Sesame Dressing

The real key to this recipe isn’t the fact that cucumbers have been made into noodles, but that the noodle are very thin. This alone has made cucumber even more enticing for me. While the size of the noodle is 100 percent a personal preference (after all, this salad can be made with ribbon-cut cucumbers as well), the smaller size twirls around the fork in such a satisfying manner that it’s hard to not to smile when you tuck into a bowl.

90-Second Keto Bread

Forget Atkins and Paleo — the new low-carb diet du jour is called keto, as in ketogenic. Although there are many similarities between these diets, a keto diet is all about restricting carbohydrates and increasing healthy fats. The goal is to force your body’s metabolism into ketosis, which means it burns fat instead of glucose — because without carbs, glucose isn’t readily available.

Radishes Braised with Shallots and Vinegar

Radishes are a quintessential spring and early summer vegetable. Bright and crunchy with a peppery bite, they are lovely in salads and on bread with butter and salt. But until this recipe I had never cooked them, and in fact it’s not very often you see them in hot cooked dishes. Which is a shame, because as they get so juicy and mellow, I think this is really the way to go for the radish-hesitant. In fact, their small size and peppery flavor makes them ideal for a quick evening braise. Unlike potatoes or turnips or other large roots, they require little to no chopping, and they’re ready so quickly.
